Scott Brian Schroeppel passed away on February 20, 2020 at the age of 55 at his home in Highland, Utah. Scott was born on June 08, 1964 in Marshalltown, Iowa to Leslie and Joyce Schroeppel. The eighth of eleven children. He married the love of his wife, Enedina Alas on November 19, 1988 and were later sealed in the Manti Temple on November 27, 1995.
Scott had a lifelong love of music whether it was listening to it or singing it. He loved classic rock and made it a point to educate his children to know good music when they heard it. His passion and talent for singing was enjoyed by all who heard him. Scott also enjoyed playing the guitar. He never received formal lessons but anything he wanted to accomplish he put his heart and soul into. He enjoyed the outdoors more than anything-he loved to go camping with brothers as a younger man, go out shooting and loved to take Sunday rides up the canyon with his family and would always be seen riding his motorcycle any day the weather would permit. He had a knack for woodworking and would make jewelry boxes for all his daughters and chests for his sons. Scott had many talents but everyone's favorite was his expertise in cooking. Scott and his wife Enedina started Cocolitos Mexican Restaurant to which they have dedicated their lives for 21 years. He loved to create new dishes and experiment with different flavors at home as well as in his business. He was a dedicated and a hard working man and had many dreams for himself and his family that he relentlessly strived to accomplish. He was never without a joke or a witty remark. Though he didn’t always realize it, he was loved and looked up to by many and will be missed by all.
Scott is survived by his five children: Shelisa Schroeppel, Mckenzie Schroeppel, Jade (Daniel) Patterson, Conner Schroeppel, Colten Schroeppel; and two grandchildren: Benson and Brigham.
Funeral services will be held Tuesday, February 25, 2020, at 11 a.m. in the Highland 4th ward at the Avonmore Latter-day Saint Chapel located at 5848 West 11000 North Highland, Utah 84003. A viewing for friends and family will be held on Monday, February 24, 2020, from 6-8 p.m. at the same location and on Tuesday just prior to the service from 10-10:30 a.m.. Burial will be held at the Eastlawn Memorial Cemetery after the service. A luncheon will follow at the Avonmore building for the family.
